Chicken Corn Chowder

What You Need:

  • 1/2 bunch of celery, chopped

  • 1 lg onion, chopped

  • 1 red bell pepper, diced

  • 3 Tbl olive oil

  • 3 cans diced potatoes, drained

  • 3 cans creamed corn

  • 1 can whole corn

  • 1 can sliced carrots

  • 3-4 cups heavy cream

Directions:

Salt, pepper, 2 packets chicken bouillon powder, parsley, dill weed.

2 cans chicken breast, drained OR 2 chicken breasts cooked and diced.

Saute veggies in oil til soft. Add canned veggies. Add cream and spices. Stir on low heat. Add chicken. Add milk if needed to thin it. Garnish with dill and paprika. Add crisp, crumbled bacon if desired.
