Caprese Chicken

What you need

1 large chicken breast diced

8 Roma tomatoes

4 tbsp butter

1 cup milk

Italian seasoning

Basil

Basalmic glaze

Directions:

1. Dice chicken into bite sized chunks and melt butter in pan.

2. Brown chicken on medium-high heat until the sides are not pink but not fully cooked to the center. Season heavily with dried basil and Italian seasoning. Use tongs to set chicken aside, leaving butter in pan.

3. Cut tomatoes in half and put in pan to soften. It’s okay if they get a bit charred. Lower the temperature to low heat. Add milk and use immersion blender to blend tomatoes into a sauce. Season with Italian seasoning, salt and pepper.

4. Simmer until the sauce thickens a little and then add chicken back into it and simmer until chicken is cooked through.

5. Top with fresh mozzarella slices and put a lid over it until cheese is melted. Drizzle with basalmic glaze, sprinkle with basil and serve.
