Ingredients:
4 slices sourdough or thick, crusty bread of choice
2 tablespoons honey mustard
2 slices white cheddar cheese
4 slices deli turkey
thin tomato slices from 1 medium red tomato
½ cup fresh baby spinach
4 strips cooked bacon
2 tablespoons butter softened
Instructions:
Arrange the 4 slices of sourdough on a flat surface.
Spread ½ tablespoon of honey mustard on each slice.
Halve the cheddar slices and place one piece on each slice of bread.
Layer two slices of turkey on two of the bread slices, then top with thin tomato slices and about ¼ cup of spinach each.
Place two strips of bacon on each of the remaining slices.
Close the sandwiches by placing the bacon-topped slices over the turkey and spinach layers, bacon side down.
Spread ½ tablespoon of butter on the outside of each slice of bread.
Heat a skillet over medium heat. Toast the sandwiches for 3–4 minutes per side, until golden brown and the cheese is melted.
Serve warm with your favorite sides.
